Any simple white fish will love being served on a swirl of Ciolo Cilantro Pesto.  You can try this with any of our green Pesto. Our family's favorite is using Cilantro Pesto with Halibut.  We also love Cod with Jalapeno Pecan Pesto.  The steps are very simple:

1. Turn on your broiler, oven or heat the grill.  

2. We usually brine our fish for about 15 minutes in a 5% salt to water solution, but you can just rinse it, pat it dry and brush or rub the fish with a little olive oil.  If you haven't brined the fish, sprinkle both sides with a bit of sea salt.  

3. Pre-heat your broiler, oven or grill. When hot, cook the fish - we use the old Canadian Fisheries guideline of 10 minutes per inch of fish thickness.

4 A minute or two before the fish is done, warm the pesto in a microwave safe bowl for 30 seconds or so.  This isn't necessary but it's a nice touch.

5. Spoon some pesto onto each plate and top with the fish.
