Stuffed Mushrooms
We use regular, white button mushrooms to make a festive, fun appetizer that's as a quick and easy as it popular.
Take a dozen or more mushrooms, rinse quickly and shake in a strainer to dry.
Cut off the tough stems and hollow out the bottom of the mushroom.
Set the mushrooms cap side down in a sheet pan and fill with a 1/2 teaspoon or so of Jalapeno Pimento or regular Pimento cheese.
Run the mushrooms under a broiler for a few minutes until the cheese is bubbly and melted.
Serve and enjoy the compliments!
