Jalapeño Pecan Pesto
I am in LOVE with your Jalapeño Pesto. It is brilliant in every way. I have shared my recent obsession with several friends and relatives who are shy at first, then dancing on the table after one bite. Kelli in KS
Description
The word “pesto” literally means crush or pound. These days, most Americans use the word to mean the sauce made from a mix of basil, pine nuts, parmesan and olive oil. But “pesto” can really mean any mixture of herbs that you’ve pounded, crushed or mixed into a thick sauce that is good on its own, or as a coating for pasta, a topping for pizza, or almost anything else you can think of doing with it.
In this popular version, we’ve mixed Jalapeños with parsley, pecans and olive oil. So there’s a bit of a kick but mostly it’s just delicious. While it’s great on pasta, we use it many ways. (Click here for some ideas).
